What’s in Buffalo Chicken Egg Rolls?

HOW TO MAKE AIR FRIED BUFFALO CHICKEN EGG ROLLS?

In a medium bowl, combine the cooked chicken, buffalo wing sauce, shredded cheese, ranch dressing and cream cheese until it’s completely blended.

HOW TO FOLD EGG ROLLS:

Add about 1/4 cup of tap water to a small bowl and keep it nearby to seal the edges of the wrapper.

Lay one egg roll wrapper on a flat surface with the bottom corner pointed toward you. Add about 3 tablespoons of filling to the middle of the wrapper (photo 1).

Use your finger or pastry brush to dab water on the edges of the egg roll wrapper then make one turn of the egg roll (photo 2).

Fold in the two opposite corners so it looks like an envelope (photo 3).

Continue rolling tightly then seal the bottom of the wrapper with another dab of water (photo 4).

Seal the egg roll wrapper well so the cheese doesn’t ooze out when you cook them.

air frying the egg rolls:

Preheat the air fryer to 400° for 3 minutes.

Lightly spritz the egg rolls with cooking spray OR brush with olive oil all the way around and on both ends.

Place the egg rolls in the air fryer basket in a single layer then air fry for 8-10 minutes or until the egg rolls are golden brown.

Pause and turn them over about halfway through. Cook times will vary with air fryers.

Serve right away with creamy ranch dressing, blue cheese dressing, slivered green onions or carrot and celery sticks.

VARIATIONS TO THIS RECIPE:

  • Add a little shredded slaw or kale with the chicken mixture for a little texture.
  • Substitute mozzarella cheese in place of cheddar cheese or use half cheddar/half mozzarella.
  • I use Frank’s Buffalo Wing Sauce but you can substitute your favorite spicy buffalo sauce.

WHAT TO DO WITH LEFTOVER EGG ROLLS:

Leftover egg rolls can be stored in an airtight container in the fridge up to 3 days. NOTE: They’re best when eaten the day they’re made right from the air fryer.

CAN I FREEZE AIR FRYER EGG ROLLS?

Yes, these egg rolls can be frozen too. Wrap well to avoid freezer burn and store up to 3 months in the freezer.

HOW TO REHEAT EGG ROLLS:

Reheat egg rolls in the air fryer on the ‘reheat’ cycle or lower temp (about 350°) until warmed through. Add extra time if you’re reheating from frozen.

TIPS AND FAQ:

  • Make sure your egg roll is sealed really well so the filling doesn’t ooze out when you cook them.
  • Air fried egg rolls come out crispier than oven baked.
  • Leftover egg roll wrappers can be frozen up to 3 months.
  • Any cooked chicken will work in this recipe: leftover chicken, rotisserie chicken or cook your own in a skillet, slow cooker or instant pot.
  • To air fry in batches, keep them warm on a baking sheet in a 225° oven.
  • To avoid soggy egg rolls, preheat the air fryer, don’t overfill the egg roll wrappers and use a light amount of oil before air frying.

HOW TO OVEN BAKE BUFFALO CHICKEN EGG ROLLS:

To bake Buffalo Chicken Egg Rolls prepare according to the recipe including brushing with olive oil, then transfer to a parchment paper lined baking sheet.

Bake at 400° 12-14 minutes total turning halfway or until golden browned and crisp then serve right away.

NOTE: air fried egg rolls end up crispier than oven baked but either method is delicious.
