WHAT’S THE BEST KIND OF SHRIMP TO BUY?
- Start with jumbo or large shrimp as they will shrink down when they’re cooked.
- I buy shrimp already peeled and deveined. You can leave the tails on or remove them.
- Either fresh or frozen shrimp work well in this recipe. I always keep frozen shrimp on hand.
- Thaw frozen shrimp before cooking.
HOW TO THAW FROZEN SHRIMP:
- Thaw shrimp in a bowl of cold water in the sink.
- Resist the urge to thaw in warm water as it makes the shrimp tough.
- After they’re thawed, lay the shrimp on a paper towel and blot dry before cooking.
HOW TO MAKE PERFECTLY COOKED SHRIMP EVERY TIME:
You only need to keep three letters in mind when cooking shrimp:
U – undercooked shrimp hold a U shape
O – overcooked shrimp curled into itself in a tight ‘O’
C – perfectly cooked shrimp form a soft ‘c’.
