It’s a classic side elevated with freshly grated creamy, smoked gouda cheese and makes the perfect addition to any holiday dinner and the best vessel for your favorite gravy.

It calls for only a few simple ingredients and can be made ahead of time. Let’s go.

WHAT’S IN THIS SMOKED GOUDA MASHED POTATOES RECIPE?

  1. Yukon gold potatoes cubed (can use russet potatoes instead)
  2. Salt
  3. Butter
  4. Whole milk (can also use half and half or heavy cream)
  5. Smoked gouda cheese freshly grated

Optional garnish: chopped Italian parsley

HOW TO TO MAKE SMOKED GOUDA MASHED POTATOES:

Freshly grate the Gouda cheese and set it aside.

 

Peel and cut the potatoes into equal size chunks (about 1 to 1 1/2″) so they cook evenly, then add them to a large pot with enough cold water to cover them.

Cover the pot and bring the water to a boil over medium heat, then generously salt the water (about a tablespoon). This helps infuse flavor to the potatoes while they cook.

 

Reduce the heat to medium to medium low then simmer 12-15 minutes or until the potatoes are fork tender.

Drain potatoes then return them to the pot over very low heat for 1 minute letting any residual water evaporate. This prevents the mashed potatoes from being gummy.

Rough mash the potatoes using a potato masher (my preference) or electric mixer if you want a completely smooth consistency –  then make a well in the center of the potatoes.

Add the butter and about half of the milk to the well, continuing to add milk as you mash until the potatoes are smooth.

Stir in the grated smoked Gouda cheese by hand then taste for salt (the best part!) and add salt until it’s your perfect amount.

Add a pat of butter on top and (optional) a sprinkle of chopped parsley and serve hot.

 

CAN I MAKE MASHED POTATOES AHEAD OF TIME?

Absolutely! You can definitely make these potatoes ahead of time for easier entertaining or there’s plenty of action on the stove.

These finished mashed potatoes will keep in their pot for about 30 minutes or transfer them to a slow cooker on the warm setting (or low if yours doesn’t have a warm setting) for up to 2 hours.

Before serving just give them a good stir and add another pat of butter.

SUGGESTIONS AND VARIONS TO THIS RECIPE:

While these potatoes don’t need anything else, but if you’d like to jazz them up a bit, any one or two of these would be a great addition:

  • crispy cooked bacon
  • caramelized onions
  • transfer to a baking dish, adding extra cheese and broil until the top is golden
  • a dollop of horseradish or sour cream
  • black pepper or white pepper
