WHAT DO I NEED TO MAKE WATERMELON FETA BLUEBERRY BITES?
- seedless fresh watermelon
- block of feta cheese
- fresh blueberries
- fresh mint leaves
- balsamic reduction or balsamic vinegar (optional)
- toothpicks
HOW TO MAKE WATERMELON FETA BLUEBERRY BITES:
Cut watermelon into approximately equal 1″ cubes then transfer to a large bowl.
Blot excess moisture from the feta then cut into cubes slightly smaller than the watermelon.
To assemble, skewer one small mint leaf, a single blueberry, then a feta cube and finish with a watermelon cube discarding watermelon juice. Repeat until all ingredients are used.
Place assembled skewers onto a platter.
Optional: drizzle with balsamic reduction then serve immediately. NOTE wait to drizzle balsamic until just before serving.
TIPS FOR THE BEST WATERMELON FETA BLUEBERRY BITES:
Since we’re only using only 3-ingredients, choose the best quality you can find.
These bites taste best chilled so refrigerate at least 10 minutes before serving.
RECIPE VARIATIONS TO TRY:
- Balsamic Glaze: Drizzle a little balsamic glaze over the top for a tangy twist.
- Melon Baller: use a melon baller on the watermelon instead of cubing.
- Herbs: Sprinkle with fresh basil or a little cracked black pepper for an extra layer of flavor.
- Fruit Swap: Try using cantaloupe or honeydew melon in place of watermelon for a different take.
- Star cookie cutter: cut watermelon in shapes for your 4th of July celebration.
- Bed of arugula: serve on a bed of arugula or other greens.
- Watermelon Blueberry Feta Salad: instead of skewers, toss in a bowl and serve as a refreshing summer side dish.
- Use other favorite herbs such as basil.
